We had a fantastic dinner at Republic of Texas! We started the evening as a couple, then our baseball friends Jo and Ed joined us along with another friend. We enjoyed the truffle fries, shrimp cocktail, and surf and turf, all of which were outstanding. We paired our meal with The Glenlivet Scotch, which was the perfect complement. The food, service, atmosphere, and stunning bay views made for an unforgettable evening. Highly recommend for a special night out—we’ll definitely be back!

Had 7:30 reservations for our anniversary and didn't leave until after 9:30. The food took so long to come even when I said they could cook my steak in the faster butterfly method. It seemed they cooked things out of order since a couple who were seated after we ordered got there food first. We asked multiple times as to when the food would arrive and was either told it'll be soon or that they would check and come back to give us an update which they never did then. Once they brought the food over an hour later I asked for steak sauce which they never brought. Luckily the steak was cooked well. There was no apology for the delay until we addressed it with the waitress when they asked if we wanted dessert. By this point we really didn't since we had waited so long and we're just tired of sitting at our table. But the other table had their dessert comped for the food being delayed, so I'd hope that that might be the case for us too. We ordered the cheesecake which again took a while to come because they added in two more desserts that were comped but by this point it's almost 9:30 so they just need to get rid of their desserts for the day. Wonderful place to enjoy a fine dining meal and take in the incredible views. Filet was cooked perfectly and the Hatch mac n cheese is the best I have ever had. Cocktails were great and enjoyed the "make your own" old fashioned. Overall fantastic dining and drinks, we will definitely visit again!

This was my fourth visit to this restaurant, and I find myself increasingly unimpressed each time. The food is merely average, and considering the prices, I know I can and have enjoyed much better meals at several other places in town. The portion sizes relative to the cost definitely leave much to be desired. While the view is lovely, that’s only if you manage to secure a table with a sightline. Otherwise, it feels unwelcome to wander around the restaurant for photo opportunities against the backdrop. On this occasion, I made a reservation for my brother’s birthday dinner, as he was visiting from Florida. Our reservation was for 7:45 PM, but we ran ten minutes late. I called ahead to confirm that our table would still be available, and the manager (an older lady with blonde hair) reassured me it was fine since they were running behind as well. Upon our arrival, we checked in but were asked to wait about 30 minutes to be seated. Once at our table, we ordered drinks and children’s meals right away. My husband and I celebrated our 17th wedding anniversary here and made reservations for 6 PM. We were seated shortly after arriving, and our waiter was attentive throughout most of the evening. However, service lacked toward the end of our visit. Since it was our first time dining at Republic of Texas, we were unsure of the checkout process. Our server mentioned that we could charge the bill to our room, but we wanted to leave him a generous cash tip. Unfortunately, he walked by our table several times without acknowledging us, and we waited over 20 minutes before I finally had to get up and practically head toward the kitchen to give him our payment and tip. We still left a 20% tip because we understand how busy Saturday nights can be, but when guests are sitting there with to-go bags, it only takes a few seconds to check on them and see what they need. That was our only disappointment, and although it was frustrating, I would not take any stars away because of it. We ordered the Bison Steak, Ribeye, baked potato, au gratin potatoes, quail knots, scallop appetizer, crème brûlée, bread pudding, and bread. Everything came out hot, fresh, and delicious.
